Date and cheese salad

Ingredients for 4 servings:

  • 300 g date(s), fresh
  • 250 g green grapes
  • 250 g strawberries
  • 50 g almonds, blanched
  • 200 g cheese (butter cheese), spicy, without rind, egBel Paese
  • 4 tbsp lemon juice
  • 2 tsp honey, liquid
  • 4 tbsp Amaretto
  • some pepper, green, coarsely ground
  • 4 tbsp crème fraîche

Halve the dates, remove the stones, and peel off the smooth skin. Rinse the grapes and strawberries under cold water and drain well. Halve and deseed the grapes, and halve or quarter the strawberries depending on their size. Halve the almonds and cut into small cubes or sticks. Place the dates, grapes, and cheese in a bowl. Mix together the lemon juice, honey, almond liqueur, and pepper. Pour over the salad ingredients. Mix gently and refrigerate for about 20 minutes. Then fold in the almonds and strawberries and divide the salad among 4 plates. If desired, add 1 tablespoon of crème fraîche to the center of each plate.
