Ingredients for 6 servings:
- 250 g dates
- 200 g sugar
- 80 cl water
- 50 g walnuts, crushed
- 125 g cane sugar
- 125 g sugar
- 115 g butter
- 1 egg(s)
- 350 g flour
- 2 tsp baking powder
- 1 pinch of salt

Christmas cookies from the Midwest
Cream the raw sugar, sugar, and butter until fluffy. Add the egg, flour, baking powder, and salt, and knead into a dough. Chill. Cook the dates, sugar, water, and nuts for 5 minutes. Roll out the dough to a thickness of about 3 mm. Spread the filling on top. If the filling has cooled too much, this can be quite tedious. Form a roll, place it in the freezer for about 1 hour, or let it chill in the refrigerator for an afternoon. It will be easier to cut if it’s slightly frozen. Cut the roll into slices about 12 mm thick, place on a baking sheet lined with baking paper, and bake for 12 minutes at 180°C.
