Potato spelt rolls

Ingredients for 10 servings:

  • 250 g jacket potatoes, cooked from the day before
  • 300 g spelt wholemeal flour
  • 1 cube of yeast, fresh
  • 1 tsp salt
  • 1 tsp bread spice mix
  • 1 tbsp olive oil
  • 125 ml water

Instructions

Working time approx. 20 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 20 minutes

Grate the potatoes, mix with flour, salt, and seasoning. Dissolve the yeast in warm water and add it along with the oil. Knead everything well, adding a little more flour if needed. Cover and let rise for at least 30 minutes. Shape the rolls and place them on a baking sheet lined with baking paper. Cover and let rise for another 30 minutes. Brush with water and place in a cold oven. Preheat the oven to 200 degrees Celsius and bake until the rolls are golden brown and sound hollow when tapped on the bottom.
