Daviino's braised cabbage – light and delicious

Ingredients for 3 servings:

  • 400 g minced beef with a fat content of only 5%, e.g., steak tartare
  • 1,000 g white cabbage, alternatively savoy cabbage
  • 150 g lean bacon
  • 2 m.-sized onion(s)
  • 750 ml water
  • 3 tsp bouillon powder, without sugar
  • 10 g yeast flakes
  • 2 tsp pepper
  • 2 dashes of liquid sweetener or 2 – 3 tablets
  • Salt
  • Caraway seeds
  • garlic powder

Working time approx. 15 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour

Chop the cabbage and add it to a pot with the water, broth, and spices (yeast flakes serve as a seasoning). Cook for about 15-20 minutes until soft. Meanwhile, brown the onions, bacon, and ground beef in a non-stick pan without oil/butter. Loosen the roasting residue with a splash of water and add it all to the soft-cooked cabbage. Simmer over low heat for about 20 minutes. Depending on how much ‘sauce’ you want, add a little water or let it simmer uncovered. I find 750 ml of water is sufficient. Finally, season to taste and serve. For nutritional reasons, I eat the braised cabbage without any side dishes, so this makes two really large portions for me.
