Ingredients for 3 servings:
- 400 g minced beef with a fat content of only 5%, e.g., steak tartare
- 1,000 g white cabbage, alternatively savoy cabbage
- 150 g lean bacon
- 2 m.-sized onion(s)
- 750 ml water
- 3 tsp bouillon powder, without sugar
- 10 g yeast flakes
- 2 tsp pepper
- 2 dashes of liquid sweetener or 2 – 3 tablets
- Salt
- Caraway seeds
- garlic powder

Chop the cabbage and add it to a pot with the water, broth, and spices (yeast flakes serve as a seasoning). Cook for about 15-20 minutes until soft. Meanwhile, brown the onions, bacon, and ground beef in a non-stick pan without oil/butter. Loosen the roasting residue with a splash of water and add it all to the soft-cooked cabbage. Simmer over low heat for about 20 minutes. Depending on how much ‘sauce’ you want, add a little water or let it simmer uncovered. I find 750 ml of water is sufficient. Finally, season to taste and serve. For nutritional reasons, I eat the braised cabbage without any side dishes, so this makes two really large portions for me.
