Ingredients for 1 servings:
- 250 g milk, lukewarm
- 15 g yeast
- 500 g wheat flour, type 550
- 50 g butter, room temperature
- 120 g sugar
- 5 g salt
- 2 eggs
- 1 vanilla pod(s), scraped pulp
- 1 tbsp brown rum
- 50 g cranberries, dried
- 50 g cashew nuts, roughly chopped and roasted
Instructions
Working time approx. 15 minutes; Rest time approx. 1 hour 30 minutes; Cooking/baking time approx. 35 minutes; Total time approx. 2 hours 20 minutes
Knead the ingredients (except the berries and seeds) in a food processor with a spiral mixer on speed 2 for 6 minutes until you have an elastic dough. Now add the berries and seeds and knead for another 2 minutes. Cover the bowl tightly and let the dough rest for 30 minutes. Then, on a lightly floured surface, shape the dough into a ball, then into a long shape. Place it in a loaf pan and let it rise for one hour. Preheat the oven to 200°C (top/bottom). After the rising time, place the pan in the oven and bake at a constant temperature for 30-35 minutes until golden brown (use a toothpick to test the dough).
