Ingredients for 1 servings:
- 240 g oat bran
- 65 g wheat bran
- 150 g low-fat curd cheese
- 150 g cream cheese or cottage cheese
- 20 g yeast or 1 packet of dry yeast
- 6 eggs
- 1 tsp, heaped bread spice mix
- 2 tbsp cornstarch
- 1 tsp, leveled salt
- 2 tbsp sesame or flax seeds, for sprinkling

Working time approx. 15 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 1 hour; Total time approx. 2 hours 15 minutes
Dukan diet suitable
Crumble the yeast into about four tablespoons of warm water and let it stand warm for about 30 minutes. Mix the bran, quark, cream cheese, salt, bread spice, and eggs with the risen yeast until soft. Line a small loaf pan with baking paper and pour in the dough. Sprinkle with sesame seeds. Let everything rest in a warm place for another 30 minutes. Bake in a preheated oven at 180°C for 60 minutes until golden brown. After baking, turn the bread out of the pan and remove the paper. Yields approximately 1 kg of bread.
