Ingredients for 4 servings:
- 1 liter of milk
- 11 tbsp semolina (soft wheat semolina)
- 1 packet of vanilla sugar (bourbon vanilla) or vanilla sugar
- 1 tbsp sugar
- 20 g butter
- 2 pinches of salt
- 2 tbsp cream if needed
- 2 eggs
Instructions
Working time approx. 15 minutes; Total time approx. 15 minutes

Place the milk on the stove and sprinkle in the soft wheat semolina. Add the vanilla sugar or vanilla sugar and salt and bring to a boil while stirring. (Add a little more milk or semolina depending on the desired consistency—but remember that the egg yolk will also firm up the mixture.) Add the butter, and possibly the cream, and let the mixture cool slightly. Separate the egg yolks and egg whites, whisking the egg whites until stiff peaks form. Once the semolina porridge has cooled slightly, add the egg yolks and fold in the beaten egg whites. Tip: Add sugar, cinnamon, fruit, etc. to taste. You can also add cocoa powder if desired.
