Quark dumplings

Ingredients for 4 servings:

  • 4 tbsp butter, room temperature
  • 750 g dry quark
  • 2 eggs
  • 1 pinch of salt
  • 1 ½ tbsp sugar
  • 1 tbsp vanilla sugar
  • 3 tbsp breadcrumbs
  • 150 g semolina
  • 4 tbsp butter, browned, for basting
  • Flour for the hands

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Cream the room-temperature butter until fluffy. Stir in the quark, then add the eggs one at a time, followed by the salt, sugar with vanilla sugar, breadcrumbs, and semolina. Let the well-mixed mixture rest for about 30 minutes. With floured hands, form the dough into not-too-large dumplings. Place in boiling salted water and simmer over low heat for about 15 minutes. Remove with a slotted spoon and arrange on a warmed platter, basting with browned butter. Serve with compote or fruit sauce.
