Ingredients for 2 servings:
- 1 small zucchini
- 1 bell pepper(s), yellow
- 2 spring onions
- some olive oil for frying
- 2 tbsp mild ajvar
- 2 tbsp soy cream fraîche (crème fraîche alternative)
- 1 pack of soy cream (Soy Cream Cuisine)
- some vegetable broth
- 1 tbsp cornstarch
- some salt and pepper
- Spice mix (chili-garlic spice)
Instructions
Working time approx. 10 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 40 minutes
The delicious vegan sauce goes perfectly with pasta
Chop the zucchini and bell peppers and sauté them in a pan with olive oil over low heat for about 15 minutes, until the vegetables are soft. Season lightly during the cooking time. Add the ajvar, Creme Vega, Soja Cuisine, and water and stir to combine. Now, in a small bowl, mix the cornstarch with a little water until smooth and add it to the pan. Simmer for a few minutes with the finely chopped spring onions. Add water and/or Soja Cuisine if needed until the consistency is right. Season to taste and serve. Serve with pasta.
