Ingredients for 1 servings:
- 120 g flour
- 1 pack of vanilla pudding powder, 37 g
- 50 g hazelnuts, grated
- 150 g banana(s)
- 1 tbsp, heaped flaxseed, crushed
- 150 ml mineral water
- n. B. Sweetener, for about 100 g sugar
- ½ pack of baking powder
Instructions

Combine the flour, vanilla pudding powder, hazelnuts, and baking powder in a bowl. In a second bowl, combine the well-mashed banana with the flaxseed, sweetener, and a splash of mineral water. Let it swell briefly. Then combine the banana mixture with the flour mixture and mineral water. If the batter is too stiff, simply add a little more mineral water until you get a smooth batter. Pour the batter into nine muffin cups and bake at 180 degrees Celsius for about 30-40 minutes, until the muffins are lightly golden.
