Delicious pizza sauce

Ingredients for 8 servings:

  • 125 ml olive oil
  • 500 g onion(s), finely diced
  • 2 cloves garlic, finely pureed
  • 1 can of tomatoes, peeled (drained weight 425 g)
  • 1 ½ tbsp oregano, dry
  • 50 g tomato paste
  • ½ tbsp sugar
  • 3 basil leaves
  • lots of salt and pepper

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Heat oil in a pan. Sauté the onions and garlic until translucent. Crush the tomatoes and add everything to the pan. Add a good wine, if desired. Cook for 30 minutes. Then, while still keeping a steady hand, mix the tomato paste and sugar into the sauce. Add another glass of wine, if desired, and cook for 15 minutes. Season with oregano, basil, salt, and pepper to taste. Rub the pizza pans with olive oil. Suggested toppings: – Tomato/mozzarella (not beefsteak tomatoes, as they soak up the entire pizza), 3 thin slices of tomato, 4 thick slices of mozzarella, 2 leaves of basil – additionally Serrano ham; Place the ham thinly on the pizza once it is already cooked – Frutti di Mare or chicken (briefly seared) – Tuna with red onions – Half pepperoni with feta cheese/half pomodori – Salami and ham Bake the pizza for around 10 minutes at 225°C in the bottom of the oven (no fan) until the cheese is golden brown.
