Ingredients for 4 servings:

  • 500 g potatoes (mashed potatoes, ready prepared)
  • 2 large eggs
  • 3 tbsp flour
  • 150 g cheese (Emmental), grated
  • Salt
  • pepper
  • n. B. Herbs (e.g. parsley and chives), fresh or frozen
  • Oil for frying

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

Mix the mashed potatoes, eggs, flour, and cheese. Chop the herbs and stir in. Season with salt and pepper. Fry the batter in a little oil, tablespoon at a time, in a hot pan until the coins are golden brown. The pan must not be too hot, otherwise the coins will turn dark before they are cooked. Tips: Your imagination is the limit. You can easily add other ingredients (and spices) such as ham, bell peppers, sun-dried tomatoes, etc., to the batter to give the coins a new flavor every time. You can also experiment with the cheese and use a spicy mountain cheese, for example. Depending on how moist the mashed potatoes are, you may need more flour to hold the coins together. Mashed potatoes from the day before usually require less flour than fresh mash. The best thing to do is simply bake a test coin and add more flour if necessary.
