Delicious Russian soup

Ingredients for 4 servings:

  • 500 g meat (or fish or mushrooms, sausage, sausages)
  • 2 onions
  • 2 tbsp butter, margarine or oil
  • 2 tbsp tomato paste, tomato ketchup or lecho
  • 4 small pickled gherkins or pickled cucumbers, finely chopped
  • 2 tomatoes
  • 1 tbsp capers
  • 1 bay leaf
  • ½ lemon(s)
  • e.g. parsley or dill, chopped
  • salt and pepper
  • 2 liters of broth, hot

Working time approx. 35 minutes; Total time approx. 35 minutes

Solyanka Moscow style

Depending on the type of solyanka, chop the meat (or fish, mushrooms, sausage, or hot dogs) into small pieces and fry in a pan with a little melted butter. Peel and chop the onions, then fry them lightly in hot fat. Add tomato paste, tomato ketchup, or lecho and sauté for about 5-6 minutes. Wash and chop the tomatoes. Now add the browned meat (or fish, mushrooms, sausage, or hot dogs), the chopped cucumbers, tomato pieces, capers, bay leaf, and a little pepper. Pour hot broth over everything and season with salt. Cook solyanka with meat for about 1 hour. Cook solyanka with fish, mushrooms, or sausage for only about 10 to 15 minutes. Before serving, sprinkle with chopped parsley or dill and garnish with a few peeled and seeded lemon slices (not for mushroom solyanka!). Serve hot.
