Ingredients for 6 servings:
- 200 g wild garlic
- 1 large onion(s)
- 1 liter vegetable broth
- 50 ml white wine
- 200 g cream
- salt and pepper
- oil
- e.g. crème fraîche
Instructions
Working time approx. 15 minutes; Total time approx. 15 minutes
Wash the wild garlic (including the stems), briefly pour boiling water over it, and let it simmer for about 3 minutes. Dice the onion and lightly sauté in the oil. Add the dripping wet wild garlic to the onions and sauté. Pour in the vegetable stock and wine, bring to a boil, reduce the heat, and simmer gently for about 4 minutes. Remove the wild garlic and onions with a slotted spoon and puree thoroughly (in a powerful food processor). Add the puree and cream to the soup and blend until frothy. Season to taste with salt and pepper. If you like, you can add a small dollop of crème fraîche to each bowl of soup.
