Departure Leberkäse cheese spaetzle

Ingredients for 4 servings:

  • 4 onions
  • 2 tbsp rapeseed oil
  • 300 g Leberkäse
  • some salt and pepper
  • 500 g Spätzle, cooked
  • 80 g cheese, grated, preferably spicy
  • 2 tbsp balsamic vinegar, lighter
  • 4 tbsp rapeseed oil
  • 1 tsp honey
  • 1 tsp mustard, sweet
  • 2 tbsp mixed herbs, chopped (e.g. parsley, chives, chervil)
  • 200 g lamb’s lettuce

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 55 minutes

Peel the onions and slice them into thin rings. Fry them in 2 tablespoons of heated oil until golden brown and season with salt and pepper. Dice the Leberkäse (liver sausage), mix it with the spaetzle and onions, and divide it between 4 serving dishes. Sprinkle the cheese over the meat and bake in a preheated oven at 180°C (gas mark 3, fan oven 160°C) for 20 to 25 minutes until golden brown. Mix together the vinegar, oil, honey, mustard, and herbs and season with salt and pepper. Wash and trim the lettuce and toss it with the dressing. Garnish the casserole with herbs, if desired.
