  • 400 g Creme fraiche Cheese
  • 150 ml Cream
  • 120 g Sugar
  • 8 Egg yolk
  • 1 Vanilla pod scraped out
  • Brown sugar
  1. Bring the creme fraiche with the vanilla pulp and cream to the boil and stir the egg yolks with the sugar. Stir in the hot cream mixture and bring to the boil, then fill in the bowl and put in the cold, then sprinkle with brown sugar and caramelize with the Bunsen burner
