  • 400 ml Cream
  • 100 g Sugar
  • 6 Egg yolk
  • 1 Vanilla pod
  • Brown sugar

Instructions
 

  • Beat the egg yolks and sugar. Bring the milk, cream, vanilla pod (scraped out) to the boil, add the cream to the egg yolk mixture, stir with the mixer on a medium setting until it is smooth.
  • Pour the mixture into refractory molds and poach in a water bath at 100 ° C for about 1 hour. Sprinkle the cooled cream with brown sugar and caramelize.
