Dessert: Simple Orange Quark with Walnut Brittle

- 250 g Quark
- 100 ml Cream
- 2 tablespoon Raw cane sugar
- 3 leaf Gelatin white
- 2 piece Organic oranges
- 3 tablespoon Walnut brittle

- Wash the oranges with hot water and peel them. Do not dispose of the trays. This is used to make dried orange zest. * Remove the white skin from the orange and cut out the fillets. Catch the juice. Put three fillets aside for the garnish, cut the rest into small pieces.
- Let the gelatine soak in a little cold water and liquefy over low heat.
- Mix the quark with the cream and sugar well. Then fold in the orange pieces.
- Mix two tablespoons of it with the liquid gelatin and then stir into the rest of the quark mixture. Let it set in the refrigerator.
- Spread the cream – it may have become a little firmer – on dessert glasses or bowls, sprinkle with the brittle and decorate with an orange wedge and chocolate deco.
- * For the orange zest, thinly separate the peels from the white skin and let them dry on a board for about two days. Then chase through an old coffee grinder or through the blender.
- Instead of the walnut brittle, you can of course also use almond or hazelnut brittle.
- If you want to make brittle yourself, put 100 g walnuts without fat in a pan, sprinkle two tablespoons of sugar over it and stir slowly until the sugar has settled on the nuts.
