Ingredients for 4 servings:

  • 600 g potatoes
  • 600 g zucchini
  • 1 large onion(s)
  • 1 tbsp olive oil
  • 2 cloves garlic
  • 1 can of peeled tomatoes (400g)
  • salt and pepper
  • Oregano, shredded
  • basil, shredded
  • 1 tbsp tomato paste
  • 1 tsp sambal oelek

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 45 minutes

Peel and dice the potatoes. Bring water to a boil; when it’s boiling, add salt, add the diced potatoes, and cook for about 15 minutes. In the meantime, dice the onions, chop the garlic, and wash and dice the zucchini. Heat the oil in a pan and sauté the onions and garlic. Add the zucchini cubes to the pan and sauté briefly. Dice the tomatoes and add them to the pan with the liquid. Season with salt, pepper, oregano, and basil. Add tomato paste and sauté for another 5-10 minutes. Add the drained potatoes and sambal oelek and mix everything together. Finally, season to taste.
