Ingredients for 1 servings:

  • 125 g flour
  • 100 g psyllium husks
  • 50 g seeds (chia, pumpkin seeds, etc.)
  • 1 tbsp salt
  • 400 g water
  • 150 g sourdough (50% water/flour)

Working time approx. 10 minutes; Rest time approx. 12 hours; Cooking/baking time approx. 1 hour; Total time approx. 13 hours 10 minutes

Sourdough bread suitable for a diet.

First, weigh and mix the dry ingredients. I always do this directly in the mixing bowl. Then add the water, followed by the sourdough, and knead quickly. The consistency should be such that the dough just holds together. Otherwise, add a splash of water. Then place the dough in a baking pan or on a piece of baking paper. Let it rise for 8-12 hours in a switched-off oven at approximately 50 degrees Celsius. Then turn on the oven and bake at 200 degrees Celsius for about one hour. The calories are calculated using chia seeds and may vary slightly for other seeds. Calories per 100 g: 127 kcal.
