Ingredients for 4 servings:
- 400 g spaghetti, cooked, drained
- 30 sage leaves
- 100 g butter
- 6 egg yolks
- 125 ml cream
- 100 g Parmesan or Pecorino, grated
- Salt and pepper, colored, from the mill
Instructions
Working time approx. 15 minutes; Total time approx. 15 minutes
Melt the butter with the sage leaves. Whisk the egg yolks with the cream. Fold in the grated cheese. Mix the hot spaghetti in the pan with the sage butter. Pour the egg, cream, and cheese mixture over the spaghetti and fold in. Season with salt and pepper. The sage leaves are edible.
