Ingredients for 2 servings:
- 500 g potatoes, mainly waxy
- 1 onion(s)
- 150 g smoked streaky bacon
- 4 eggs
- some oil for frying
- n. B. Salt and pepper, mixed, freshly ground
- some Tabasco
Instructions
Working time approx. 25 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 45 minutes
Dice the bacon and render the fat in a pan or pot until crispy brown. You can also render the rind. Then remove the bacon and set aside. Discard the rind. Peel the potatoes and roughly dice them into bite-sized pieces. Fry the cubes in the bacon fat with a little extra oil like fried potatoes until crispy brown. Peel the onion, halve it, and cut it into strips, then fry it with the potatoes until browned. Season with salt and pepper. Finally, add the bacon again. Crack the eggs into a bowl with a little salt, pepper, and a few dashes of Tabasco until frothy, then pour over the cooked potato, onion, and bacon mixture. Turn off the heat and, using a spatula, repeatedly loosen the set egg from the bottom, stirring and stirring until the egg is sufficiently set, similar to scrambled eggs. You have a real, hearty farmer’s breakfast, just like it is made in the former northern German farming state of Dithmarschen.
