Ingredients for 1 servings:

  • 1 small onion(s)
  • 1 bell pepper(s), green
  • 0.33 Pepper, hot
  • 125 g tomatoes
  • 4 tsp olive oil
  • Tomato paste
  • Spice mix (Harissa)
  • Salt
  • 1 egg(s)
  • Paprika powder
  • 150 ml water, warm

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Peel, halve, and dice the onions. Deseed and clean the bell peppers, then cut into small squares. Chop the peppers, peel, and dice the tomatoes. Heat olive oil in a pan and fry the onions until translucent. Stir in the vegetables and sauté for about 5 minutes. Mix the tomato paste, harissa, and paprika powder in 150 ml of warm water and stir in. Cover and cook over low heat for 20 minutes. Season with salt. A second person would be helpful at this point. While one person uses two spatulas to separate the vegetables, the other cracks the eggs into the empty spaces. Cook for 7 minutes. Trying to cook this in a casserole dish in the oven wasn’t a good idea. Tip for carnivores: Cook meatballs, poultry giblets, or sausage slices at the same time.
