Ingredients for 2 servings:
- 2 eggs
- 1 banana(s)
- some blueberries
- some cinnamon
- some baking powder
- Oil for frying
- Desiccated coconut, maple syrup or fresh fruit to serve
Instructions
Working time approx. 5 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 20 minutes
delicious, simple, low-calorie and healthy
Add a little oil to a pan and heat. Mash the banana with a fork. Mix the two eggs and the mashed banana until smooth. Stir in a little cinnamon and baking powder. Ladle the batter into the pan and scatter the blueberries over the batter. Cook the pancakes until they reach the desired color. Sprinkle the pancakes with desiccated coconut, maple syrup, or fresh fruit, if desired. You can, of course, adapt the recipe by swapping or adding a few ingredients.
