Ingredients
 

Donut

  • 500 g Flour
  • 30 g Sugar
  • 2 Eggs
  • 125 ml Milk
  • 100 g Butter
  • Powdered sugar
  • 1 packet Yeast
  • 1 packet Vanilla sugar
  • Clarified butter
  • 300 g Plum jam
  • 1 tsp Salt

  • 250 g Flour
  • 125 g Sugar
  • 3 Eggs
  • 250 g Low fat quark
  • 1 packet Baking powder
  • 200 g Raisins pickled in rum
  • 3 drops Bitter almond oil

Instructions
 

Donut

  • For the donuts, put the flour in a bowl, make a well with a spoon and sprinkle the sugar into the well. Then crumble the yeast in as small pieces as possible in the middle. Only then is it mixed with the flour.
  • Then add lukewarm milk to the yeast and sprinkle with vanilla sugar. Mix the sugar, yeast, and milk carefully in the middle and then let the mixture ferment in the oven at 40 degrees for 10 minutes.
  • Then remove the fermented mass, mix everything together and only then mix in the eggs and butter.
  • Knead the dough well with the ball of your hand - this makes it light and airy! In a finger test, the dough should be so elastic that it comes up again. Then let rise again at 40 degrees for 40 minutes.
  • Knead the risen dough well again on a floured work surface and pull it apart into a roll. Then remove equally sized pieces from the dough and shape into round balls.
  • To fill, press the balls flat, use the teaspoon to put the plum jam or another jam in the middle and fold the sides together and press firmly so that nothing leaks out during frying.
  • Bake the filled donuts in the deep fryer until they are browned all around, then take them out and let the fat drip off on a wire rack!
  • You can also only fill the donuts AFTER deep-frying: for this you put the jam in a piping bag, stick the tip of the bag into the donut and press the jam into the pastry. Dust with powdered sugar.

  • Mix eggs, flour, quark and sugar. Add baking powder, vanilla sugar and bitter almond oil and whisk. Then the special thing: mix in the raisins pickled in rum!
  • Put the butter fat in the deep fryer and heat it to 170 degrees. Then carefully pour the donut batter into the fat and bake until the donuts are evenly brown on all sides. Remove the finished donuts from the fat and drain. Dust with powdered sugar.
