Ingredients

Donut

  • 500 g Flour
  • 1 Pc. Yeast cubes
  • 100 g Sugar
  • 80 g Butter
  • 3 Pc. Eggs
  • 125 ml Milk
  • 1 pinch Salt
  • 4 tbsp Jam
  • Vegetable fat

Coated almonds

  • 300 g Flour
  • 100 g Food starch
  • 80 g Sugar
  • 1 g Salt
  • 1 tsp Baking powder
  • 3 Pc. Eggs
  • 150 g Butter
  • 1 Splash Rum Flavoring
  • 1 pinch Cinnamon
  • Vegetable fat

Quark balls

  • 500 g Flour
  • 500 g Quark
  • 200 g Sugar
  • 1 packet Bourbon vanilla sugar
  • 1 pinch Salt
  • 1 packet Baking powder
  • 4 Pc. Eggs

Instructions

Donut

  • For the donuts, put the flour in a bowl and make a well. Crumble the yeast in the well and mix it with sugar and a little milk. Let this dough rise for 10 minutes.
  • Knead the pre-dough well with the remaining ingredients. Cover and let the dough rise again in a warm place until it has risen nicely.
  • Roll out the yeast dough on a floured worktop (1.5 cm). Use a glass (or any other round shape) to cut out circles of the size you want. Cover the Berliners and let them go again.
  • Heat the vegetable fat for deep-frying to 170 ° C-180C ° and add the donuts in portions and fry them (2-4 minutes). Turn once in between, making sure that the pastry does not turn too brown.
  • Then take out the donuts, drain them and fill them with any jam using a piping nozzle. If you want, you can coat the Berliners with sugar or chocolate glaze or roll them in sugar.

Coated almonds

  • For the almonds, mix the flour, starch and baking powder in a bowl. Add butter, eggs, sugar and spices and knead in thoroughly. Then let the dough rest in the refrigerator.
  • Roll out the dough on a floured work surface about 1-1.5 cm and cut out with a coin almond shape (also works with two teaspoons).
  • Heat the deep-frying fat to 180 ° C and fry the almonds in portions. Then drain and roll in sugar.

Quark balls

  • For the quark balls, stir the eggs and sugar in a bowl until frothy. Stir in the quark, sugar, vanilla sugar and a pinch of salt.
  • Mix the flour with baking powder and sift into the bowl - knead all ingredients well.
  • Heat the deep-frying fat to 180 ° C and use two spoons to remove balls from the dough. Fry crispy in hot fat. Then drain and roll in sugar.
