Dorayaki – Japanese pancakes

Ingredients for 1 servings:

  • 2 eggs
  • 30 g sugar
  • 1 tsp honey
  • 110 g flour
  • ½ tsp baking powder
  • Fat for baking

Instructions

Working time approx. 10 minutes; Rest time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 40 minutes

Combine eggs, sugar, and honey in a bowl. Sift in the flour and baking powder (this helps reduce lumps). Mix well until no lumps remain. Let rest for 15 minutes. Cook the pancakes in a lightly greased pan over medium heat until golden brown on both sides.
