Ingredients for 1 servings:

  • 115 g feta cheese
  • 60 g liquid honey
  • ½ tsp salt
  • 65 g wheat flour type 405
  • olive oil
  • Flour for the work surface

Instructions

Working time approx. 10 minutes; Rest time approx. 20 minutes; Cooking/baking time approx. 2 minutes; Total time approx. 32 minutes

makes about 12 flatbreads

In a large mixing bowl, mash the feta, honey, and salt with a fork until smooth. Add the flour and mix until a dough forms. Now use your hands to knead the dough in the bowl until smooth. Cover the bowl with plastic wrap and let the dough rest at room temperature for 20 minutes. Divide the dough into 12 equal portions and roll out on a lightly floured surface into very thin flatbreads about 7.5 cm in diameter. Lightly grease the bottom of a non-stick frying pan with oil and fry the bread over medium to low heat for about 1 minute per side until golden brown. Serve warm.
