Ingredients for 4 servings:
- 2 eggs
- 100 ml milk
- 2 tbsp sugar
- 2 tbsp honey
- 120 g flour
- 1 tsp baking powder
- 80 g paste, adzuki beans

Japanese filled pancakes
Place the eggs, milk, sugar, and honey in a bowl and mix together, preferably with a whisk. Then mix the flour with the baking powder and gradually stir into the egg mixture (careful to avoid lumps). Place 2 tablespoons of the batter into a wok over medium heat, then rotate the wok until the batter coats the entire bottom. When small bubbles appear on the surface after about 2 minutes, carefully flip the pancake over with a spatula and cook on the other side for about 3 minutes until browned. Use the remaining batter to make about 7 more pancakes. Put the bean paste (adzuki beans) in a bowl and stir well. Then spread this over 4 pancakes and smooth it down. Place another pancake on top, as a lid, so to speak. Then quarter all the pancakes and serve them on a plate.
