Salad dressing with oranges

Ingredients for 4 servings:

  • 2 oranges, halved
  • 4 tbsp sunflower oil, or other light oil
  • 2 tbsp Balsamic vinegar, white
  • 1 pinch(s) black pepper
  • 1 tsp, leveled salt

Instructions

Working time approx. 5 minutes; Total time approx. 5 minutes

First, squeeze the juice of 1 1/2 oranges into a tall mixing bowl; a few pieces of orange flesh are fine to add. Now add the sunflower oil, white balsamic vinegar, salt, and pepper, and blend with a hand blender for a few seconds until a foamy emulsion forms. Season to taste. Sweeten with the juice of the remaining orange half, if desired, and blend again; the dressing should taste more sweet than tart. Drizzle generously over the salad with a tablespoon and serve immediately. All strong, dark lettuce varieties, such as lollo rosso, rocket, lamb’s lettuce, or baby spinach, go well with this dressing.
