Funny sweet pancakes – Roti Jala

Ingredients for 2 servings:

  • 250 g orange juice, lukewarm
  • 1 tsp, leveled chicken broth, instant
  • 4 tbsp white sugar
  • 2 m.-sized eggs
  • 120 g coconut milk
  • 180 g wheat flour type 405
  • n. B. Palm oil, premium quality
  • 3 tbsp sugar, white, fine
  • 1 pinch of cinnamon powder

Instructions

Working time approx. 5 minutes; Rest time approx. 5 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 20 minutes

Recipe from Malaysia.

Mix the orange juice with all the ingredients except the flour until smooth. Then, with a mixer fitted with a whisk, add the flour a spoonful at a time and mix everything into a smooth batter. Let it rest for 5 minutes. In the meantime, mix the sugar with the cinnamon. Strain the batter through a sieve. Heat a nonstick pan and add a little of the palm oil. Using a jala cup (4 holes approximately 4 mm in diameter on the handle), scoop out about 60 ml of the batter and pour it into the pan in a circular motion to make a “funny pancake.” Fry for about 1 minute on each side until light brown. Remove from the pan, sprinkle with a little of the cinnamon sugar, and enjoy warm.
