Ingredients for 4 servings:
- 1.2 kg ground beef (Black Angus ground beef)
- 4 burger buns (pretzel burger buns)
- 8 slices of Black Forest ham
- 2 pak choi
- 4 slices of cheddar cheese
- 1 vegetable onion(s)
- 300 ml BBQ sauce (Whiskey Barbeceau Sauce)
- 2 tsp sambal oelek
- 4 tbsp vegetable oil
- 2 tbsp soy sauce
- 2 tbsp honey
- 2 king oyster mushrooms
- salt and pepper
Instructions
Working time approx. 40 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 55 minutes
You will need 4 long wooden skewers. Preheat the oven to 190°C (fan). Cut the king oyster mushrooms into 0.5 cm thick slices. Remove the stems from the pak choi and remove the leaves. Slice the sweet onion. Mix together the oil, sambal oelek, and soy sauce. Season the minced meat with salt and pepper and form into 8 patties, each weighing approximately 150 g. Spread the ham on a baking tray lined with baking paper. Add the onion slices, season the onions only with salt and pepper, and drizzle with honey. Just leave the ham as it is! Place everything in the preheated oven and bake for 12 minutes. Fry the patties in a non-stick pan without oil for 2-3 minutes on each side. In a second pan, first fry the king oyster mushroom slices until golden brown. Then add 8 pak choi leaves and fry briefly. Drizzle everything with the oil mixture, turn over, and fry for two to three minutes. Briefly toast the burger buns in the oven or in the toaster oven. Remove the baking sheet with crispy ham and lightly caramelized onions from the oven. Stack the burgers: Spread the underside of the buns with whiskey barbecue sauce. Place a patty on top. Then stack a slice of ham, two slices of mushrooms, a slice of cheddar, two pak choi leaves, a layer of onions, the second slice of ham, and the second patty on top. Then brush the top of the bun with barbecue sauce. Secure the tower with a skewer. The pretzel buns go perfectly with the mushrooms and cabbage. Any other bun will work, too. The same goes for the barbecue sauce. The whiskey note gives the burger a little extra kick. Any other burger sauce will work, but it won’t taste as exquisite! Serve with sweet potato fries and your favorite sauce of choice.
