Ingredients for 5 servings:
- 1 kg of lamb, pork or beef
- 5 carrots, roughly chopped
- 1 piece(s) ginger (thumb-sized), sliced
- 3 garlic cloves, finely chopped
- salt and pepper
- 1 piece(s) celery, sliced
- 1 stalk(s) leek, sliced
- 4 sprigs of thyme
- 1 handful of wild garlic
- 1 cup buttermilk
- 1 bottle of honey
- 1 bottle of wine (Hypocras – spiced wine), or
- Red wine, good, medium-dry
Instructions
Working time approx. 1 hour; Total time approx. 1 hour

Cut the meat and vegetables into large pieces. Chop the herbs and ginger about the size of a thumb, and the garlic not so finely. Take a roasting pan and place it on the fire. Add the meat, vegetables, and herbs and sear for a few moments. Season with salt and pepper. Cover the meat with honey and let it simmer. After a few more moments, add a splash of buttermilk, enough to cover the bottom, and let it simmer. Top it up with good wine and put it in the oven (about 40-60 minutes at 180°C).
