Ingredients for 6 servings:

  • 500 g rice (wild rice mix)
  • 2 carrots, chopped
  • 4 bell peppers, yellow and red, cut into fine strips
  • 1 eggplant(s), roughly diced
  • ½ pack of sugar snap peas, halved in half
  • 1 bunch of spring onions
  • 1 vegetable onion(s)
  • 2 cloves garlic
  • 3 Piri Piri
  • curry powder
  • salt and pepper
  • Cayenne pepper
  • Paprika powder
  • Thyme
  • Soy sauce
  • Oil (peanut), mixed with neutral oil
  • 250 g turkey breast fillet(s), chopped

Instructions

Working time approx. 40 minutes; Total time approx. 40 minutes

Cook the rice. In a wok or large frying pan, first fry the turkey fillet in the oil. Gradually add all the ingredients and mix. Add the piri-piri pods whole. Season to taste with the spices and mix with the rice.
