Ingredients for 6 servings:
- 500 g rice (wild rice mix)
- 2 carrots, chopped
- 4 bell peppers, yellow and red, cut into fine strips
- 1 eggplant(s), roughly diced
- ½ pack of sugar snap peas, halved in half
- 1 bunch of spring onions
- 1 vegetable onion(s)
- 2 cloves garlic
- 3 Piri Piri
- curry powder
- salt and pepper
- Cayenne pepper
- Paprika powder
- Thyme
- Soy sauce
- Oil (peanut), mixed with neutral oil
- 250 g turkey breast fillet(s), chopped
Instructions
Working time approx. 40 minutes; Total time approx. 40 minutes

Cook the rice. In a wok or large frying pan, first fry the turkey fillet in the oil. Gradually add all the ingredients and mix. Add the piri-piri pods whole. Season to taste with the spices and mix with the rice.
