Ingredients for 1 servings:
- 400 g apples, grated
- 5 m.-sized eggs
- 200 g hazelnuts, chopped
- 20 g flour
- 60 g breadcrumbs or semolina
- 1 tsp sweetener (stevia powder)
- 1 packet of baking powder
- 1 tbsp honey, or maple syrup
- 1 tbsp Amaretto
Instructions
Working time approx. 20 minutes; Total time approx. 20 minutes
For 12 pieces
Separate the eggs. Beat the egg yolks with stevia until frothy. Add the grated apples, hazelnuts, baking powder, flour, breadcrumbs, amaretto, and honey and mix well. Beat the egg whites until stiff peaks form and fold in. Pour the batter into a 24/26 cm baking pan and bake at 180 degrees Celsius for about 50-60 minutes. This is a cake that can be baked and eaten even while on a diet. Tip: Cover the cake with chocolate after it has cooled. It’s also delicious with a little jam. Variation: Replace the apples with pumpkin.
