Dream cake with nuts and kiwi

Ingredients for 1 servings:

  • 4 eggs, separated
  • 1 packet of vanilla sugar
  • 90 g sugar
  • 100 g flour
  • ½ tsp baking powder
  • 30 g sugar
  • 125 g butter
  • 125 g powdered sugar
  • 2 egg yolks
  • 1 packet of vanilla sugar
  • 200 ml cream
  • 125 g walnuts, chopped
  • 2 kiwis
  • 200 ml cream
  • 2 tbsp sugar
  • 1 kiwi(s)
  • possibly walnuts, halved

Instructions

Working time approx. 45 minutes; Total time approx. 45 minutes

Beat the egg whites with 30g of sugar until stiff. Beat the egg yolks with the vanilla sugar and sugar until frothy, then fold in the flour and baking powder. Finally, fold in the beaten egg whites. Grease a springform pan, pour the batter into it and bake at 190°C for 15-20 minutes. Let the base cool and cut it in half. Place a cake ring around the bottom layer. For the filling, whip the cream until stiff, peel the kiwis and cut into small cubes. Beat the butter with the powdered sugar, egg yolks and vanilla sugar until fluffy, then carefully stir in the chopped walnuts and diced kiwis. Finally, fold in the whipped cream. Spread the mixture onto the bottom layer, place the second layer on top and refrigerate the cake for 1 hour. For the garnish, peel and slice the kiwi and whip the cream with sugar until stiff. Remove the cake from the refrigerator and remove the cake ring. Spread the cream all over and on top of the cake. Garnish with kiwi slices and, if desired, halved walnuts.
