Dream of Leek – Potato Soup
The perfect dream of leek – potato soup recipe with a picture and simple step-by-step instructions.
- 700 g Leeks
- 250 g Potatoes
- 2 Shallots
- 60 g Butter
- 400 ml Vegetable stock
- 350 ml Milk
- 150 ml Cream
- 1 Bay leaf
- 0,5 bunch Chives
- Ready-Made or homemade croutons
- Salt, pepper and nutmeg
- Cut the leek into approx. 1 cm thick slices and wash thoroughly. Peel and dice the potatoes. Finely dice the shallots and sauté in the butter. Add the potatoes and leek, pour in the stock and milk and bring to the boil. Add the bay leaf and season with salt, pepper and nutmeg. Covered with mitl. Simmer heat for 30 minutes.
- Whip the cream until stiff and refrigerate.
- Now puree the soup and pass through a fine sieve. Fold in the whipped cream, possibly bring to the boil again and season to taste. Garnish with chives and croutons. White bread tastes good with it.
- If you want, put diced bacon or crayfish on the plate before serving. It really tastes great.
