Ingredients for 4 servings:
- 2 tbsp vinegar (raspberry vinegar), homemade
- 6 tbsp oil (walnut oil), high quality
- 1 onion(s), red, peeled and diced
- 1 small garlic clove(s), peeled
- ½ tsp mustard (Dijon), slightly hot
- 1 pinch(s) brown sugar
- 75 g ham, raw, finely diced
- Salt
- Pepper, from the mill
- 200 g lamb’s lettuce

my favorite salad
Rub a bowl with the garlic clove, then add the vinegar, mustard, salt, pepper, and a pinch of sugar to the bowl and mix well until the spices dissolve. Now add the walnut oil. Stir until a creamy emulsion forms. Microwave the ham cubes on a plate between two paper towels until crispy. Set the ham cubes aside and let them cool. This way of cooking the ham keeps all the fat in the paper towels, but if you don’t have a microwave, you can also cook it in a pan as usual. Add lamb’s lettuce (about 200g) to the dressing and mix, then sprinkle the ham cubes on top.
