Dressing for leaf salads

Ingredients for 3 servings:

  • 100 g leaf lettuce, preferably lamb’s lettuce
  • ½ onion(s)
  • 1 tbsp forest honey
  • 1 tbsp apple cider vinegar
  • 1 tbsp rapeseed oil
  • 1 tbsp water
  • 1 handful of peanuts, salted
  • 1 handful of parsley, flat, roughly chopped
  • salt and pepper
  • Salad herbs as needed

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

with salted peanuts

Prepare the lettuce: tear, wash, and dry. Finely dice the onion and roughly chop the parsley. Combine all ingredients, except the peanuts and parsley, and stir until a smooth sauce forms. Pour the sauce into a salad bowl. Then add the parsley and salted peanuts and season to taste. Because of the saltiness of the nuts, you may need a little more water. Add the prepared lettuce just before serving (5 minutes before), toss gently, and serve.
