Dried fruit compote for Passover

Ingredients for 6 servings:

  • 500 g dried fruit, e.g. plums, apricots, apples, pears
  • 1 lemon(s), the juice
  • 4 tbsp sugar
  • 2 liters of water

Instructions

Working time approx. 10 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 1 hour; Total time approx. 2 hours 10 minutes

Place the water and fruit in a large pot and bring to a boil. Once the water is boiling, reduce the heat, add the sugar, and mix well. Cook until the fruit has bulked up and is soft (about 1 hour). Add the lemon juice, mix well, and taste. If necessary, add a little more sugar and lemon juice. Cook for a few more minutes until the fruit is completely soft. Then refrigerate it so it can be served cold. This is a complete meal; it tastes delicious and is very refreshing.
