Dried Tomatoes in Olive Oil

The perfect dried tomatoes in olive oil recipe with a picture and simple step-by-step instructions.

  • 250 g Sun-Dried tomatoes
  • 2 Garlic cloves
  • Fresh basil
  • Fresh thyme sprigs
  • 2 piece Sugar cubes
  • Vinegar
  • Water
  • Olive oil
  1. Cook the tomatoes in a mixture of 1/4 vinegar and 3/4 water and with the sugar for 2 minutes. Drain and dry well with kitchen paper. Put a layer of tomatoes in a suitable, resealable jar, add the garlic, layer the basil and thyme alternately, pour in oil and pour a few drops of vinegar over it.
