Duck in garlic marinade

Ingredients for 6 servings:

  • 1 m.-sized duck(s), fresh or frozen (but then thawed)
  • 50 ml oil
  • 1 bulb(s) garlic
  • Salt
  • pepper, black

Instructions

Working time approx. 30 minutes; Rest time approx. 12 hours; Total time approx. 12 hours 30 minutes

Wash the duck and pat it dry. Separate the breast bones and flatten the entire duck. Then puree the oil with the garlic, salt, and pepper. Place the duck in a casserole dish, rub it well with the marinade, and let it marinate – ideally overnight (but it can also go straight into the oven). Bake in a preheated oven at 160°C – 180°C for about 1 hour until golden brown.
