Dumpling hash brown with cheese and egg

Ingredients for 2 servings:

  • 3 large dumplings (leftover potato or bread dumplings)
  • 1 onion(s)
  • 1 small can of corn
  • 80 g Emmental or Gouda cheese
  • 2 m.-sized eggs
  • salt and pepper
  • some nutmeg
  • some butter
  • some paprika powder, sweet, possibly smoked

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 15 minutes

Cut the dumplings into cubes. Peel and dice an onion. Melt a little butter in a pan and fry the dumplings; you can also use mixed dumplings. Add the diced onions and fry briefly. Drain the corn and add them. Season everything with salt, pepper, nutmeg, and paprika. Crack the two eggs into the pan, mix well, and let set. Finally, stir in the cheese, either grated or diced, and let it melt. You can add herbs if desired. Bacon, leftover roast bits, or other vegetables can also be used as variations.
