Ingredients for 1 servings:
- 350 g potatoes
- 2 spring onions
- 1 bunch of mixed herbs, e.g. dill, parsley, chives,…
- 5 eggs
- Salt
- pepper
- some butter for frying

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes
Simple and so variable
Slice the potatoes and fry them in a little butter. In the meantime, slice the spring onions into rings and finely chop the herbs. Crack the eggs into a bowl and mix them with the herbs. Add the spring onions to the potatoes and fry briefly. Now pour in the eggs and let them set. Season to taste. Tip: This dish also tastes great with some bacon, onions, and/or mushrooms.
