Ingredients for 4 servings:

  • 500 g potatoes, floury
  • 100 g starch flour (wheat or potato starch)
  • 1 egg yolk
  • 1 tbsp butter
  • Salt
  • nutmeg

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 50 minutes

Wash, peel, chop, and cook the potatoes. Allow to cool slightly and then press through a ricer. Season with salt, butter, and nutmeg. Stir in the egg yolk and cornstarch. With floured or damp hands, form small or large dumplings. Cook a test dumpling in boiling water to see if it sticks. Add a little more cornstarch if the dumpling is too soft. If the test dumpling sticks, cook the remaining dumplings. Depending on their size, cook the dumplings for 15-20 minutes. Dumplings are a perfect accompaniment to festive roasts and meat dishes with plenty of sauce! Enjoy!
