Ingredients for 4 servings:

  • 1 kg potatoes, cooked
  • 100 g flour
  • 100 g starch flour
  • 1 egg(s)
  • nutmeg
  • Salt
  • butter
  • Rolls or toast

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Press the cooked potatoes through a potato ricer. Add the flour, 80g cornstarch, egg, nutmeg, and salt, and knead into a dough. If the dough is too dry, add another egg. Briefly toast the bread rolls or toast cubes in a pan with a little butter. Form the dough into dumplings and place one or more toasted croutons in the center, depending on your taste. Roll the dumplings in the remaining cornstarch and cook in plenty of salted water for about 5 minutes, then let stand for another 10 minutes.
