You should not eat cheese rinds made from artificial substances or with preservatives.
- Artificial Fabrics: Artificial barks include bark made from wax, paraffin, or plastic. If the bark is artificial, you will find a corresponding note on the packaging.
- Natamycin: The preservative is similar in structure and effect to penicillin. It protects the cheese from the spread of mold. Taken regularly, natamycin can kill important gut bacteria and cause drug resistance. You will also find it in the list of ingredients under the abbreviation “E 235” or “Pimaricin”. In this case, you should cut off the bark by half a centimeter.
Eat the cheese rind: You can eat this rind without hesitation
- Naturally Aged Cheese: The rind of naturally aged cheese is edible. These include Emmental, Parmesan or Allgäuer. You can also eat the rind of blue cheese.
- Biochar: Some cheese rinds contain biochar for preservation. It is listed under the abbreviation “E 153” in the list of ingredients. It can be eaten.
