Ingredients for 20 servings:

  • 200 g flour
  • 200 ml water
  • 125 g butter
  • 2 tbsp sugar
  • ½ tsp salt
  • 4 m.-sized eggs
  • 400 g chocolate
  • 700 g pudding, homemade or store-bought

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 35 minutes; Total time approx. 1 hour 5 minutes

Place butter, water, salt, and sugar in a saucepan and bring to a boil. Remove the pan from the heat. Add the flour and continue cooking until the dough forms a ball. Remove the pan from the heat and gradually add one egg at a time, whisking well. Fill the batter into a piping bag. Pipe the éclairs onto a baking sheet and bake in a preheated oven at 200 degrees Celsius for 20-25 minutes. Fill the éclairs with the custard. Dip the éclairs into the melted chocolate and let it dry. Tip: Melt 2/3 of the chocolate over a double boiler and remove from the boiler. Then add the remaining chocolate and melt. This tempers the chocolate.
