Egg and cheese toastie

Ingredients for 3 servings:

  • 6 slices of cheese, e.g. Cheddar cheese, Emmental, …
  • 2 packs of bacon
  • 5 eggs
  • 6 toasties of your choice

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 40 minutes

English muffin

First, fry the bacon in a pan over medium heat until crispy. Place the fried slices on a paper towel to drain any excess fat. In a bowl, crack the eggs and whisk. Add the eggs to the same pan and fry, stirring occasionally, until set but still soft. Then toast the toasties. Place a slice of cheese on each toastie, then 1/4 of the scrambled egg and two to three slices of fried bacon. Cover the toasties with the top halves and gently press together to melt the cheese.
