Christmas cookies for egg yolk utilization

Place the butter and sugar in a bowl and cream until very fluffy. Add the egg yolks one at a time. Finely crush the marzipan (press it through a spaetzle press or a well-cleaned garlic press) and stir in. Mix in the orange juice and orange flavorings, then add the flour. Using a piping bag, pipe strips about 5 cm long onto a baking sheet lined with baking paper. Bake in a preheated oven at 200°C for about 10-15 minutes. Spread the base of the pastries with plenty of smooth orange marmalade, stick them together, and let them dry. Dip the ends in melted chocolate coating – or sprinkle the orange tongues with chocolate coating (it’s quicker and has more orange flavor).
